Many kinds of vegetables only found in Da Lat before, now have been grown in other places; however, Da Lat vegetables are still leading in quality and abundance of species. The thin-leafed lettuce of Da Lat is also called fatty lettuce, becaute of compact head, soft and silky leaves, smooth like fat, as it is named. Besides, there is also another kind of lettuce with thick and firm leaves, called "corolle" lettuce, suitable to be eaten fresh after being cut into threads.
Cabbages and Chinese lettuce grown in Da Lat also have very compact heads. Holding a heavy cabbage in hand, you may evaluate its quality.
Cauliflower, with its freshness and sweetness, can make many delicious dishes and bring about good appetite. This is also true to green bean: these green and flat pods were once an
expensive kind of vegetables now always available in Da Lat. Another kind of equal value to green bean is sweet pepper, also called Da Lat sweet pepper and very popular in different fried
dishes.
Chinese broccoli, another kind of vegetables is very suitable to be cooked with oil or fat, which is a must for visitors to Da Lat to buy and bring home.
A plant can be used both as vegetables and a medical herb,only possibly grown in certain places nationwide: Artichoke. A high-grade vegetable, it is very nourishing, and its flower head can be used in soup, stewed with meat. All parts of artichoke, from leaf, stem, root, to flower can be dried in the sun and made into a kind of refreshing drink, diuretic and able to nourish liver cells. Besides, artichoke is also processed into a kind of tea, a daily drink for many people.
